(Oven roasted leg of lamb with potatoes)


In Ancient times a lamb was the main course at weddings, easter, birthdays, baptisms and many other special occasions. Today lamb is still a food for celebrations but it has also found its way into everyday dinnig. Lamb is prepared throught Greece in many different ways, from whole on a spit to stewed. Lamb is found on tables throughout Northern and Southern Greece.






5 lbs leg of lamb    juice of one lemon
3 lbs medium size potatoes 1 cup chicken stock
1/2 cup butter salt and pepper
1/4 cup chopped parsley 1/2 cup extra virgin olive oil     
2    onions cut in half then sliced  



Begin by preparing the meat. Wash and place in a roasting pan. with a small pareing knife make incisions big enough to put a clove of garlic inside. Stuff the wholes with garlic. Peel the potatoes and quarter them lengthwise. Place the potatoes around the leg of lamb. Put the butter and olive oil in a sauce pan and melt the butter into the oil, while mixture is still hot pour it over the leg of lamb and the potatoes. At this point go ahead and add your chicken stock, lemon juice and sprinkle salt and pepper over the entire dish and parsley. place in a preheated oven at 350 F for about 2 hours . For the first hour and 15 minutes I suggest covering the pan with foil and for the last 45 min uncover the pan and let the whole thing brown and the potatoes should crisp up and get a skin aswell. This dish can be served and is usually served in the same dish it cooked in or it can be plated on a platter for more formal presentation. Garnish with some fresh cut parsley or fresh oregano. This reciepe serves 5-6 people.


note:At some point after the first hour I will taste the potatoes and a small piece of the lamb for tenderness, salt, pepper and overall doness. I personally cook this disn in a clay roasting pot and serve it in the same dish just remeber to soak clay cooking pots in water for at least and hour before cooking. This is a great dish I hope you enjoy making it as much as I do.






1) leg of Pork can be and is done in the same cooking method just substitute it for the leg of Lamb.


2) When adding salt always remember to taste the mixture to assure there is enough before adding anymore.
